By the way, I did make a super yummy dinner that fit in the guidelines... veggie stirfry with nuts and quinoa. Not one person complained... THAT is success.
Hmmmmm - I'm not really a recipe kind of person, but I'll give it a try....
I used about 1 cup of quinoa - cooked in 2 cups of water (bring it to a boil, then reduce to a simmer, cover and cook till liquid is absorbed - about 15 mins.) Cut up onions, mushrooms, broccoli into the wok with some peanut oil. Added some thin strips of carrots (I use a vegetable peeler and peel strips into the wok)and a bunch of snap peas. When it was hot and still a bit crunchy, I added a big handful of shelled, unsalted peanuts and cashews. Cooked it for another minute or so and then plated up a big scoop of the quinoa with the veggies on top. Yummy!
